Anyone have a reccomendation for a good dockable tablet (one with a keyboard that can be snapped on like a Surface Pro, an Acer Aspire Switch, or aAsus T100TA, etc.) that is known to be able to boot into and fully or mostly support Linux? Will use 90% of time as a tiny laptop, but sometimes as a tablet in a coffeeshop, etc.?

I don't believe such a thing exists. There was a project started by the KDE community and originally called 'Spark', later 'Vivaldi', that created some working hardware. It has been officially abandoned however.
An x86 tablet, running Windows 8, could potentially have a Linux install, but those who have tried have generally been dissatisfied. On-screen keyboard implementation is apparently particularly weak.
If you want something really light running Linux, the best compromise IMO would be a used netbook.

Being one of the few chromebook owners on this forum.
The touchpad has been a sticking point on tablet newer gear.
Rumor has kernel 3.17 may show some support for these new touchpads.
My coffeshop netbook with good battery life that AntiX supports is my Dell
XT2 Touchscreen or This M&A Companion netbook.
I paid 50 bucks for either. The M&A required a power adapter for a few bucks.
The dell required ram, hard drive, power adapter.
But I am handy at building custom gear for myself.
If really interested

I think you will have better luck with a convertible laptop. Heavier, but linux will work better.

Personally, I'd use a netbook. __{{emoticon}}__
