I tried to log out of X by hitting Ctrl Alt Backspace but it would give me a blank screen instead. In fact I can't go back to X unless I make a shutdown and reboot my system.
With virtual terminals however, when I hit Ctrl Alt F1, F2 etc...it warbles my X and I can only fix it when I hit Ctrl Alt F7.
I checked my /etc/X11/xorg.conf and it was empty. Do you think I shoud restore the files I saved yesterday to /etc/X11/xorg.conf?

You could try, from one of your virtual terminals,
# dpkg-reconfigure xserver-xorg
# dpkg-reconfigure xserver-xorg

Done!
It took quite a while since when I copy pasted it, it was misalligned and had to do it manually.
I restarted and now I can access my virtuals and ctrl alt backspace again.

This could have not been possible since I can't go to virtual. Now I can __{{emoticon}}__You could try, from one of your virtual terminals,
# dpkg-reconfigure xserver-xorg
