How do i change the boot-up screen image to one of my own choosing?

Do you mean the grub menu image on installation?
If so, edit etc/default/grub
GRUB_BACKGROUND=/usr/share/wallpaper/back.jpg
Then update-grub in a root terminal.

Don't forget to have the image you WISH TO USE (.jpg or .png) in the folder / usr/share/wallpaper
