Could someone point me towards an easy to follow tutorial about extracting and installing a tar.bz2 file please.

Not sure what you need, but there's one in the MX/antiX Wiki with basics and a link to as much as you would ever want to know:

tar xvjf should extract it, need to find the README for info on how to install it.

Forgot to mention: in MX, you can just navigate to where the tarball is in Thunar, then right-click > Extract Here (or: Extract to). Installation is another matter, as fatmac points out.
