Is there a way to get the alt+tab switcher to list alll the apps it cycles through so I can be more certain of what apps are open on a desktop?

this should be the default behavior. if you hit alt+tab and release tab but hold the alt, the list will remain open. the list will only contain items from the current desktop by default.

from your other posts, I see you may be using fluxbox. To get the list by workspace that you are after, do a middle click on the desktop. this will bring up the workspaces menu. if you scroll through the workspaces, you will see a list of all open apps by workspace.
you can set a key combination for this if you don't have a middle mouse button. the keys file is what you are after, located in ~/.fluxbox
